Rice Barley Soup

I was about to eat with a friend of mine, who had a bowl of soup in his hand, standing, who then…looked over to another table and started to walk away.                                                                                                                                                                                                                                                       “Aren’t you going to eat with me, M?” I asked. “Just a sec,” I think he said. Or maybe nothing at all, but went over and placed his bowl of soup in front of a very poor-looking man, sitting empty at an outdoor table. I love that so much. I think I will never forget that in my lifetime.

Recipe of the Day – Rice Barley Soup

Ingredients:

10 c. water or vegetable stock

1 cup barley

2 tsp. coconut crystals or your choice of sweetener

2 cloves of garlic, minced

handful fresh celery leaves

1 c. brown  rice

1 c. chopped green onion

6 fresh basil leaves

1/8 c. fresh oregano

1 tsp. pepper

Options: chopped carrots, mushrooms, potatoes, sweet potatoes, salsa, Tobasco, handful of spinach, beans or lentils!

Directions:

Place everything but the basil and oregano into a large pot. Bring to a boil, cover and reduce heat. Simmer for one hour. Makes approximately 10 cups of soup.

 Tip of the Day – There are so many people here in Vilca that just give and give. And when people tell them stories of being taken, or, “Don’t give to that guy,” you know what they do? They just give and give.
