Tomato-Corn Salad

“Dorothy, do you mind if we put off your work for a week, because I have to plant my corn?” Jose asked. Now, I know why it’s so important today to plant. Because it’s the full moon!

Recipe of the Day – Tomato-Corn Salad

Ingredients:
6 ears of corn, cut off the cob
1 onion, diced
1 red pepper, diced
2 T. Italian parsley
12 basil leaves, chopped
2 tomatoes, diced
  options: add beans and rice, cilantro, garlic
Directions:
Toss together. Top with Italian Dressing:
Italian Herb Dressing.
Ingredients:
1 tsp. honey
2 tsp. lemon juice
½ tsp.salt
½ tsp. Italian seasonings
2 T basil or cilantro
⅓ c. apple cider vinegar
a splash of water
Directions:
Pour over salad. Delicious.

Word of the Day – sembrar – to plant

Tip of the Day – You plant, too, Dorothy! Always best to plant at the full moon. So I’ll do another row of lettuce, and transplant two rose bushes to the front of the new house!
