Rachel’s Mojito

My kids and I went to Jardin Escondido for lunch, and had  great lunch of guacomole, veggies for me, salad, burritos, enchiladas for those two, and to top it off, they ordered the best Mojitos they ever had in their lives – $2 happy hour. They came home and re-created it, and they came out awesome! I do this recipe without the rum, and with stevia instead of sugar. Chill!.

Recipe of the Day – Mojitos

Ingredients:

9 small limes

1 big handful of mint leaves

1/2-1 cup sugar/panela (to taste)

Water to taste (about 2-3 cups)
Directions:  Juice the limes Pour lime juice over 1/2 c. sugar. Tear up mint and muddle in juice/sugar mixture.mPour water to taste
Optional – add rum
 Word of the Day – ron – rum
 Tip of the Day – I often ask the waiter/cook for their recipes, then go home and re-create it! So fun and saves money! I do this recipe without the rum, and with stevia instead of sugar. Chill!.
