Passion Fruit Mousse (Maracuja)

Ther are new maracuya flowers on the land! The fruit follows the bloom, so soon I’ll have maracuyas (passionfruits)! I was wondering when they would come.

In one year, besides my vegetable garden, I’ve had three-fourbatches of figs from my dwarf trees, mucho strawberries, several moras, an apple from the dwarf apple (came with), two papaya trees packed with papayas, and 4-5 mangoes on my mango tree!

 

Recipe of the Day – Maracuya Mousse

Ingredients:

6 Maracuya – Passionfruit
4 c. coconut milk
1 T. chia seeds soaked in 6 T. water
Mint sprigs, for garnish
Directions:
Place one spoonful of the fruit in each of 4 wine/martini glasses. Blend the rest of the passionfruit with the coconut  milk and pour into glasses. Serve immediately or cover with plastic wrap and refrigerate for up to 8 hours. Serve cold with a mint sprig  and a few of the seeds on top. The seeds are where all the taste is!
