Well, I was worried about my brother and his family living in Joshua Tree, CA. The fires were so close that they had to evacuate to a hotel! Luckily their house, set way back in the desert, was unharmed. They took themselves off to Hawaii to celebrate! And they got to swim with the dolphins!
2 c. (sprouted) sunflower seeds or pumpkin seeds
1 c. pine nuts
1/4 c. chopped bell pepper
1 “/2.5 cm piece ginger, peeled
2 cloves garlic
1 tsp. dried oregano
1/4 c. fresh basil
1/4 c. Coconut Aminos/Braggs to taste
Combine all in a blender with enough water to cover. Start blender,
adding more water to produce a very thick creamy liquid. Pour into a
sprout bag and squeeze out liquid. You are left with the cheese.
The remaining liquid becomes a dressing with the addition of fresh minced herbs and a little more aminos, a touch of raw agave or honey and a dash of water. To thicken the dressing, blend in some tahini.
Word of the Day – queso – cheese
Tip of the Day –Sunflower seeds abound here, so its great to use them as stuffing for celery, mushrooms, cucumber boats, etc. You can make this into a sweet cheese by eliminating last five ingredients and adding dates with cinnamon instead. Yummy!
