This morning I went with Tiko to San Jose, a barrio on the other side of Vilcabamba, a beautiful, lush area. I went to my friends’ house – Susannah and Phil, who sold me some parsley, much-needed celery plants and dragonfruit trees! Woohoo. You dig a shallow hole, fill it half with sand, then plant the tree and built up a mound around it. It’s helpful to have a frame for it to climb up, as you would a vine. The dragonfruit is a type of pitahaya, great for the stomach, and tastes sweet and soft, like a calm kiwi. I love them.
- 1 dragon fruit (Pink)
- lime juice from one lime
- 1 Tab. simple stevia syrup (see recipe on this blog) or 2 drops Stevia liquid
- 1 quart sparkling water
Scoop the fruit from its skin and put in the blender with the other ingredients. Blend quickly. Enjoy over ice cubes or chill.

Tip of the Day – When you live alone, its good to push yourself to get out and see others, meet others and engage in relationship. You sure learn alot about yourself that way!
