Orange Tahini Salad Dressing

“Why did you add the flat part to the roof, Dorothy,” my ex- asked.  Well, that view is so spectacular, I wanted a flat plane , a flat part of the roof to sit and gaze out. But I told Jose I was afraid I didn’t have enough money. And he said,”No, Dorothy! We’ll even put a roof on it. Because we use the four posts we have now, and we would’ve roofed that section anyway, so we won’t spend any more in materials! They’re gonna wall on the two back sides, but the front will be open, to sit at a table Carlos (the Shaman’s husband), made me, or the lazy chairs Wilson made me, and maybe have boxes for flowers and such. And a winding staircase to go up to it!

Recipe of the Day – Orange Tahini Salad Dressing

2 T raw tahini
1/2 c. orange juice
pinch salt
1 tsp. ginger
1/4 tsp. cumin
2 drops liquid dulse
1/8 tsp. curry powder
optional – 1 garlic clove

Directions:

To make your own tahini, soak 2 T sesame seeds in water for at least 40 minutes. Blend ’til creamy. Add the other ingredients and mix well. Chill.  Use within 3 days. GREAT to marinate cucumbers and as a dip for vegetables, as well as a salad dressing.

Tip of the Day – Start your lettuce and other greens growing as soon as you land here. I was dying because I’d been here three days and still hadn’t planted my seeds. But they grow so fast – in 9 days, last September. We’ll see what happens now as I plant for them for the 3rd time this year!
