Cherimoya Custard

 Tonight I didn’t get done talking my daughter until dark, so I watered the flowers with the light of the yoga platform, then took Tiko for his evening walk in the dark, with the fireflies lighting up the hillside. The air was so sweet, tonight, with some kind of flower, wow! I kept sniffing deeply to try and recall which flower it was, but it eluded me. So sweet, like Easter. Lilies, maybe, no. But they’re common here. Orchids! Yes, I think so, wow. They grow in the wild! Then, to top off the night, I heard a great fluttering in the fica tree nearest the house, and tried with my flashlight to capture the bird. Night after night, for ten months now, I’ve wondered who coos to each other, every night, in that tree. Owl, laysecas, or doves? I caught the white flash of a belly elouding the flash of my light, and then, straight above me, sat three doves, just like in a Christmas tree, nestled down for the night. Three! The 4th still fluttering around. And I stared, and stared, and moved around underneath with my light, the light not bothering their still, warm, white round bellies. So, so, so  dang beautiful. Truly, like a Christmas tree lit up by white doves in the darkness. Wow.

Recipe of the Day – Cherimoya Custard

2 or 3 medium  ripe cherimoya (peeled and seeded)
(in chunks)
2 c. almond milk or coconut milk
3/4 cup of lemon juice
1 Tab. chia seeds soaked in 3 Tab. water

Cream the fruit, milk and soaked chia seeds in a blender, then slowly add the lemon, and next the cherimoya chunks to blend slowly. Garnish with mint leaves and chill for at least 2 hours. So creamy you won’t believe it!
