Recipe of the Day – Amaranth Stir-Fry

Ingredients:

2 c. amaranth greens, chopped large

2 large green onions, chopped

1 c. sliced mushrooms of choice

1 orange carrot

1 purple carrot, sliced in strips

6 baby corn on the cobs

1 red bell

1 stalk celery (apio)

1/2 c. pineapple pieces (optional)

2 Tab. Sunflower Oil

2 cloves garlic

1 /4 c. Bragg’s Amino Acids

turmeric

ginger

salt and pepper

Directions: Heat the oil in a skillet or wok, and add the chopped veges. Stir quickly until soft and translucent – 1-2 minutes. make your sauce of Bragg’s (soy sauce) with spices. Add to wok. Top with pineapple pieces and peanuts, if desired.

Tip of the Day – I had this advice first from my Spanish teacher. Go out and talk to your workers, Dorothy. Get to know them, and they will open up and be happy workers. And, it’ll help your spanish!
