Fresh Fig Jam!

I have goosebumps.  (piel de gallina aka chicken skin) I just got my first corn-on-the-cobs from my hundred plants. Well, actually, Tiko got the first one, and that’s how I knew they were ready. And then, of course, the guys had to get into it and tell me which ones were ready, and which ones weren’t. And I have six or eight papayas, my first ones, which will be ready in a month or so, yay! Then I got, for the third time in nine months, two figs off my little dwarf fig (higo) tree. Yum! They’re so plump and sticky sweet, wow. It must be because we had three days of rain in a row. Did you know that figs are not really a fruit, but actually a flower that has folded up into itself? I love it!

Recipe of the Day: Fig Jam

Ingredients:

  • 3-4 fresh figs
  • 1 T. Lemon juice
  • Water as needed
  • 1 T. sweetener: coconut nectar, Stevie , fruit or honey
  • 1/4 tsp. cinnamon – optional
  • 1 T. Chia seeds – soaked 10 min.

Directions:

Soak chia seeds in water for 10 minutes. Add all, except water, to your blender and blend quickly, adding water as needed. Eat immediately, or chill.
