Carob-Coco Pudding

Who would have predicted it? Another dang happy day. It’s just so incredible! Like I was lifted up, and held in some incredible light. The incredible light of  Spirit and Vilcabamba. There’s even another gorgeous rainbow over the valley. Like something you’ve never seen. It feels like everything is a completion today. I don’t know why.

When the workers saw me coming from the house, holding a huge coconut in my hand, they knew I was gonna ask someone to cut if for me. I used to say, “Can you take his head off?” because those were the words I knew in Spanish, ha ha! Today I made this pudding from the coconut and gave them each a little cupful.

Recipe of the Day: Carob-Coco Pudding


flesh of one coconut

1/3 c. coconut juice, or more to liquify

1/4 c. carob, or cacao + carob powder

1 T. Stevia powder

1/8 c. Coconut syrup  (or sweetener of choice)

2 drops Liquid vanilla Stevia

dash salt

dash vanilla powder Open a young coconut (a pipa) and pour off the milk.

Directions: Scoop out all the coconut meat. Blend with the other ingredients until creamy. Add more coconut water, if desired. chill.

Variations: add strawberries, coconut, cacao nibs, cinnamon, carob

Tip of the Day: Drink a coconut! Super-hydrates you, and has more potassium than 4 bananas! And electrolytes!
