I’m so stressed this minute because my dog keeps getting out in the evening after the workers leave. Does he not love me? Why does he love the workers more than me? I take him for two long hikes a day, hey! And he even got a great gift today! Well its actually for me and Tiko – a mochila, a backpack for Tiko! So can carry his own food an water, dang it.
One of the reasons I need him to carry his own food and water, is because when we got into town, Vilcabamba, they really don’t want everyone’s dogs in the stores, the bank, the restaurants. Well, they do, they try to be nice, but its better, in the small shops, if he can have his own water and food, and be tied up outside. The Tienda (small shop) keepers are SO nice, and they won’t say anything, and they’ve known since he was a little guy, but now he’s taking up much so much room in the little shops. So he’s got to stay outside.
So, to comfort myself, with all the escapism I made my Comfort Rice with camote, carrots, green onions, peppers, thyme, oregano and cilantro, parsley, all the veges from the garden! Camote is an amazing sweet potato, which looks like a yam, but is purple inside! And the texture is a little bit more velvety and creamy, and warm and sweet. I love it so much. It’s awesome cooked in a slow fire.
Recipe of the Day:Camote Comfort Rice
1 c. brown rice
2 c. water
1 camote (large sweet potato, yam)
1 huge carrot, grated
3 green onions, sliced
1 bell pepper, sliced
handful fresh thyme, chopped fine
handful fresh rosemary, chopped fine
handful parsley, chopped fine
handful cilantro, chopped fine
2 cloves garlic, chopped fine
2 T. olive oil
Boil 2 c. water and add the rice. Simmer for 45 minutes. While its cooking, saute the onions and garlic in olive oil, then add all the rest and saute until tender, just a few minutes. Stir into the cooked rice. Enjoy with walnuts, and Bragg’s sauce, if desired. It’s great the next day, a cold rice salad with vinaigrette!

Travel Tip of the Day – Always shake your boots out before you put them on in the morning! Because there are endless amounts of creepy-crawlies. It’s their land, after all! I just stuck on house on it.
