Apple Butter

I came home to find a corn cake from Wilson, my gardener and Gabby, his wife, and a jar of her homemade apple butter! Wow! Immediately my mind zoomed back to my childhood. My mom would make the most awesome apple butter in a big huge pot (she had 11 of us children to feed!) and it tasted so amazing, warm and homey, as she fed me from her big spoon. Was I the only one in the kitchen? How could that be?
Recipe of the Day: Apple Butter

3 Red Delicious Apples, Manzanas!, cored, unpeeled, chopped
1 T. chia seed, soaked 10 minutes
2 tsp. lemon juice
1 T. honey or other sweetener, to taste
1 tsp. cinnamon
1/2 Tsp. nutmeg
1/2 tsp. cloves
1 pinch salt
Blend and chill! Yummy on almond crackers, raw celery, raw sprouted bread, or eaten alone! You can warm it up, if you like, like my mom did.

  1. Holy moly! Another great recipe! I LOVE apple butter and I never got the chance to ask my mom what her recipe was! This is so good! Just like my mom’s!
